The Problem
Virginia Tech diverts 10 to 15 TONS to compost on average per week. This means even more food waste is generated on a weekly basis. To help counteract this high amount of food disposal, we propose to convert the waste into a valuable chemical: glutamic acid.
Pre-consumer Food Waste:
any food that never touches the consumer's plate.
Post-consumer Food Waste:
any food that is left over after consumption.
